Almond-Pistachio cream:

  • 100 g butter, 100 g sugar
  • 40 g ground almonds, 60 g ground pistachios
  • 2 eggs, 20 g flour
  • 35 g whipping cream
  • 4 ml bitter almond aroma 

Sugar syrup:

  • 1 L water
  • 1.35 kg sugar
  • 20 g vanilla essence

Pistachio meringue:

  • 200 g caster sugar
  • 4 egg whites, Pinch of salt
  • Few drops of green food colouring
  • 10 g pistachio paste

  • Start by preparing the sugar syrup.
  • Open the croissant in half and brush it with sugar syrup.

Almond & Pistachio Cream: 

  • Mix the softened butter and sugar, then add the almond and pistachio powder. 
  • Add the eggs and beat for a few minutes.
  • At low speed, add the liquid cream, the flour and the bitter almond.
  • Mix until the mixture is homogeneous.  
  • Add the almond-pistachio cream inside and close the products.
  • Bake the products at 155°C for 12/14 minutes, then let cool.
  • Prepare the meringue
  • Beat the egg whites until stiff and add the sugar, pistachio paste and coloring.
  • Finish the products with the meringue
